Chocolate Clementines


So - I got a wild hair.  I was expecting company the other day and we were having lunch.  I wanted to do something for desert, but it was hot, and I didn't want anything to heavy.  I had some strawberries in the fridge, and some clementines I had picked up at Costco.  I decided to dip the strawberries in chocolate - a decadent, but light - dessert.  And then it hit me!  I LOVE the orange chocolates that are sold at Christmas time and one of my favorite candies are orange sticks.  Why not dip the clementine in chocolate also?!

Oh, my goodness!  I probably don't have to tell you how wonderful they are.  If you like orange and chocolate together, then this is right up your alley.  They were delightful, to say the least.  And so easy.  And light enough for a summer brunch dessert.  Try them - I think you'll like them!

I just use chocolate chips for the chocolate.  I melt them with a little Crisco (about 1 T - so the chocolate thins enough to dip) and dip whatever fruit I happen to have....

Here is a tray full of fruit.  I put it in the freezer for a few minutes, until it hardens, then I transfer the fruit to a pretty plate and keep it in the refrigerator until I am ready to serve....
And here is a beautiful strawberry... Ah summer!

    I always love making the strawberries, so this should work out GREAT too!
