What is a rainy afternoon without tea and cookies? |
1 1/2 C butter, softened
2 C sugar
2 eggs
1/2 C molasses
4 1/2 C flour
3 tsp. baking soda
2 tsp. cinnamon
1 tsp. ginger
1 tsp. cloves
1/2 tsp. salt
1/2 tsp. nutmeg
additional sugar
In a mixing bowl, cream butter and sugar. Add eggs and beat well. Mix in molasses. Add flour, baking soda, cinnamon, ginger, cloves, salt and nutmeg. Mix well. Refrigerate for 1 hour or until dough is easy to handle.
Roll into 1" balls; roll in sugar. Place 2" apart on ungreased baking sheets. Bake at 350° for 8 - 12 minutes or until puffy and lightly browned. Cool for 1 minute before removing to wire rack.
Thanks for the update. And speaking of what's been going on with you folks....is there any update on the non-electric washer kit that your husband was designing? Is he still planning on producing it?
ReplyDeleteThanks for the recipe. Hubby's mother used to make the best ginger cookies, but I could never get them s-o-f-t like hers. I'm gonna give this recipe a try.
