Our friend "Old Cowboy" refers to these as "old timey cookies". They are soft, moist and full of spices. They are one of our favorite fall cookies. You can just feel the nip in the air when the aroma of these cookies fill the house. I always have to adjust the amount of flour, depending on the humidity. I end up adding a cup or cup and a half more flour - just enough for them to hold their shape. They should be sticky, but not messy sticky. Here is the recipe:
1/2 C Shortening
1 1/2 C packed brown Sugar
1 teaspoon baking Soda
1 teaspoon Salt
1 teaspoon ground Cinnamon
1 teaspoon ground Cloves
1/2 teaspoon ground Nutmeg
1 egg
1 C chopped peeled Apples
1 C chopped Walnuts (I use Pecans)
1/4 C milk (or apple juice)
2 C all-purpose Flour
Vanilla Glaze:
1 1/2 C confectioners' Sugar
1 T butter
1/4 teaspoon Vanilla Extract
1/8 teaspoon Salt
2 1/2 T Milk
In a large mixing bowl, cream shortening, sugar, baking soda, salt, spices and egg. Stir in apples, nuts, milk and half of the flour; mix well. Blend in remaining flour. Drop by heaping tablespoons onto greased baking sheets. Bake at 400 degrees for 10 - 12 minutes. Remove to wire racks. Combine glaze ingredients and spread over cookies while warm. Yield: about 3 dozen.

Those cookies look luscious. But I'm trying to lose about 4,000lbs. so that I can withstand the impending food rationing. Love that apple peeler! Is it an antique?

ReplyDeleteThe apple peeler is an antique! I picked it up on Craigslist for $15. The date on it is 1898. It is awesome - peels apples lightening fast and kicks them off the peeler when it is done.

ReplyDeleteOH MY WORD!! These are just AWESOME cookies. I made them with a few apples from my Grandparents tree. The smell was enough to send me over the edge as they baked. I didn't put the glaze on them as they didn't last long enough to add any! I will double or triple this recipe the next time, and there will be a next time.
